Ternera (dry-aged) | Slagerij De Leeuw
Ternera (dry-aged), older veal; direct import from Spain.
TERNERA
Spanish veal from Galicia
We are importing ternera directly from northwestern Spain. The ternera we sell, is from animals not older than 10 months. Meat from older cows is known under the name of añojos (10-18 months) and cebones (18-36 months).
The animals live in the Atlantic coastal climate and they eat grass and herbs in the fields, their meat slightly has a fat marbling and it is very tasty and tender. In terms of texture and flavour the meat from these older veal has its own character and is not comparable with beef or young veal.
We also can provide you with Dutch veal, female (heifer), which has grown up with its mother. Our supplier only selects the best with fat covered and most tasty veal, dry-aged by us in the store. This meat may be from different races; a good fat cover -and therefore the taste- is our main criterium.
