Veal
VEAL
Veal (ternera and Dutch veal).
We are importing veal directly from northwestern Spain: ternera, older veal from the red coloured Rubia cattle. These robustly built cows can withstand the Atlantic coastal climate quite well. As they eat grass and herbs in the fields, their meat has a slight fat marbling and it is very tasty and tender. In terms of texture and flavour ternera has its own character and is not comparable with beef or veal.
The ternera we sell, is from animals not older than 10 months. Meat from older cows is known under the name of añojos (10-18 months) and cebones (18-36 months).
We also can provide you with Dutch veal, female (heifer), which has grown up with its mother. Our supplier only selects the best with fat covered and most tasty veal, dry-aged by us in the store. This meat may be from different races; a good fat cover -and therefore the taste- is our main criterium.
