Goose fat

You can use goose fat for cooking and frying; it gives dishes a rich, full flavor. In France, goose fat is used traditionally for the preparation of sauerkraut (such as our choucroute d'Alsace), confits and regional dishes such as cassoulet and pommes de terre sarladaise (fried potato cake with garlic and parsley). In our country, goose fat is used in a number of good restaurants, for example for roasting poultry and frying potatoes.
